Tomatoes & Goji tartar

Ingredients
  • 3 tomatoes
  • 1 avocado
  • 1 Spring onion
  • 1 cup of orange juice
  • 20g of goji berries
  • Cider vinegar
  • Olive oil
  • Sault & pepper
Preparation

Peel off 2 medium tomatoes, then cut into small cubes.
Keep the seeds and pulp for the vinaigrette.
Peel and cut avocado into small cubes.
Marinate everything in orange juice.
Drain the tomatoes and avocado.
Refine the spring onions and cut the dried goji berries.
Mix the preserved pulp and pips with cider vinegar, olive oil, pepper and salt.
Season it all, and do not forget the essential: Goji berries!
Dig a large tomato delicately and arrange the tartar nicely on the inside.
